The unique marbled pattern you see on the blade is the result of hammering together 67 layers of stainless steel around a high-carbon VG-10 core, which we then grind to one of the sharpest edges possible. The balanced ABS handle ensures comfort and proper technique with less fatigue.PRODUCT DETAILS 8-inch multipurpose Chef Knife handcrafted from premium Japanese Damascus steel, with a high-carbon VG-10 core (HRC 60-62) clad in hammered layers of stainless steel that give a distinctive marbled pattern and reduce friction. Blade is sharpened to 15 degrees per side, for optimal sharpness and edge retention. POM handle is designed to reinforce correct grip, and steel tang extends the full length of the handle to secure and counterbalance the blade.
